I would like to cursor to skip to Ref when I press Tab
I like the cursor to start at Customer when I start a new job, but then when I press TAB I want it to move to Ref

With the default beta release there's a number of "tab stops" set, so when you press the Tab key the prompt will skip these. You can add or remove these rules by going to Tools menu > Preferences.
The list you want is at the bottom right: Preferences. Each "Skip next tab position" entry tells Transactor to skip the specified box when Tab is pressed - so to be able to skip to the Ref box you'll need to remove the row "Skip Next Tab position 2 - Ref", which you can do by clicking it with the mouse so it's highlighted, then click the red 'subtract' button.
