The Invoice Address box is disabled, we need to specify a different invoice address to the customer's address

It’s not a good idea to temporarily change a customer’s Invoice Address. for some Invoices but not others, traceability is lost.
Instead, create another account for that customer and use it where appropriate.

how do you change the address of a customer of a current invoice without deleting the job and starting again?
